Yes. Sapphire runs across blue in every saturation from midnight to teal, plus yellow, pink, green, orange, peach, and the rare padparadscha. The accent diamonds are colorless, so the setting does not change with the color you choose.

Will a lighter sapphire look washed out against the white diamonds?

No. The accents are small and gathered in trios rather than running continuously around the center, so they read as texture at the shoulders instead of a bright frame competing with the sapphire. Lighter saturations hold their color; deeper saturations gain edge definition from the same contrast.
